Apricot-Glazed Pork Medallions

Ingredients:
1 pork tenderloin, cut crosswise into 1/2-inch thick rounds
salt
pepper
2 teaspoons sesame oil
1 1/4 cups apricot jam
1/4 cup tamari sauce (regular soy will work)
1 tablespoon chopped pickled ginger

Directions:
Mix jam, tamari sauce, and ginder together in a bowl, set aside. Season both sides of pork with salt and pepper. Heat oil in a large skillet over medium-high heat. Add pork and sear each side. Add mixture and simmer 5 minutes, until pork cooked through and sauce reduces.

Serves nicely with Rice, asparagus, and cooked carrots.
